This recipe was originally posted in Nov 2010. I am having an “online holiday” this coming week, so thought I would share it again as part of Christmas In July 2011 series. As I am going for an eco-friendly theme this year, we will be making a series of these Chocolate Christmas Trees as our edible table decorations for Christmas day.

Chocolate Christmas Trees Recipe

Ingredients:
• 300 grams chocolate (we used Cadbury Dairy Milk)
• 1 1/2 cups rice bubble
• 3/4 cup desiccated coconut
• icing sugar for dusting

Chocolate Christmas Trees Method:
• Break the chocolate into small pieces and place in a medium-sized microwave safe bowl (you add the other ingredients to it, so it needs to be large enough to fit all ingredients and to able to stir it easily.)
• Melt chocolate on high for about 90 seconds. Check and stir. If chocolate needs more melting, do so for 15 second bursts.
• Add coconut and rice bubbles to the melted chocolate and combine well.
• One trays lined with baking paper, spoon chocolate mixture into the shape of crosses. You could pipe them if you prefer.
• Make six crosses, each one being slightly smaller than the other. Leave a couple of tablespoons of mixture to the side. This will act as the glue to build the tree.
• Place crosses in the fridge to set for 30 minutes.
• Place the largest cross onto a serving plate. Using the left over mixture (melt in microwave for 15 seconds if it has hardened) place a dob into the middle of the bottom layer and press the next layer gently on top of this. Continue until you have layered all 6 crosses.
• Place into fridge again for 30 minutes.
• Prior to serving dust with icing sugar.

Chocolate Christmas Pudding isn’t for everyone and, even though I have faith in my pudding’s ability to convert, there’s no point fighting against real, die-hard antipathies.

Besides, I have never met a child who likes chocolate Christmas pudding, and it seems unfair not to give a treat to everyone. The joy of this is that you can mix it all up in a processor while the Christmas pudding’s in mid-steam, then put it into the top part of the steamer, while the Christmas pud steams in the bottom. Or you can use a separate pan.

Don’t be put off by having to steam another pudding. It’s easier than trying to find oven space, and what makes the chocolate Christmas pudding is that it looks like the traditional pud.

Chocolate Christmas Pudding Recipe

Ingredients:
• 250g/ 8 oz Odlums Self Raising Flour
• 125g / 4 oz Butter (softened)
• 175g / 6 oz Dark Brown Sugar
• 3 Eggs
• 150ml / 1/4 pt Milk
• 1 level teaspoon Cinnamon
• 150g / 5 oz chopped Dates
• 90g / 3oz Dark Chocolate roughly chopped
• 60g / 2oz chopped Apricots

Chocolate Christmas Pudding - Caramel Sauce:
• 175g / 6 oz Butter
• 175g / 6oz Golden Syrup
• 2 tablespoons Dark Brown Sugar

Chocolate Christmas Pudding - Method:
• Place the butter sugar, eggs, flour, milk and cinnamon in a bowl and beat with a wooden spoon for 2-3 minutes, or with a hand whisk for 1-2 minutes, until light and fluffy.
• Stir in the chopped dates, chocolate pieces and apricots.
• Turn the mixture into a buttered 1.25 litre / 2 pint pudding bowl and cover with cling film.
• Pierce cling film several times and microwave on medium for 12-15 minutes, until the mixture is firm to the touch and a skewer inserted into the centre comes out clean, apart from traces of melted chocolate.
• Leave to rest for 5 minutes.
• Caramel Sauce
• Place all ingredients in a small saucepan and stir while bringing to the boil. Simmer for 1-2 minutes until syrupy
• Turn the pudding on to a serving plate and pour some of the caramel sauce over the top. Serve with cream and the remaining caramel sauce.
